Wednesday 29 October - 10 AM to 12 PM: Encornets à la languedocienne
This dish captures the Mediterranean spirit of Languedoc, a sun-soaked coastal region in southern France known for its deep-rooted fishing heritage and vibrant culinary traditions.
Featured WA ingredients: Fresh WA squid and seasonal vegetables.
Techniques you'll learn: how to clean and prepare squid, make a fragrant rice stuffing, and slow-cook everything in a homemade tomato sauce.

Wednesday 26 November - 10 AM to 12 PM: Magret de canard, purée de pommes de terre et sauce à l'orange
This recipe highlights a traditional ingredient from southwestern French cuisine: duck. It also offers a delicious introduction to the sweet-and-savory pairing that’s so beloved in French gastronomy.
Featured WA ingredients: Duck breast from Wagin Farm.
Techniques you'll learn: Learn how to score and sear the duck, prepare a classic French-style mash, create a fragrant orange sauce, and master the art of jus and glazing for an elegant plating.
